Ribs with Pineapple, Rum and Cajun Spice

Ingredients
  • 375 ml (1 ½ cups) fresh pineapple pieces
  • 30 ml (1 oz) dark rum
  • 30 ml (2 tbsp) Cajun spice*
  • 60 ml (1/4 cup) brown sugar
  • 60 ml (1/4 cup) tomato paste
  • 2 packages of duBreton back ribs
  • 60 ml (1/4 cup) fresh chopped coriander
  • 60 ml (1/4 cuo) fresh chopped parsley
Preparation steps
  1. Pre-heat oven to 350oF (180oC).
  2. Using a blender, grind pineapple with rum, spices, brown sugar and tomato paste.
  3. Cut ribs into sections of 2 ribs and place on a cooking sheet.
  4. Pour pineapple mixture over the ribs, cover and bake in oven for 45 minutes.
  5. Stir pieces of meat and cook for a further 45 minutes.
  6. Remove cover, baste meat with sauce and continue cooking uncovered for 30 minutes.
  7. Sprinkle with herbs and enjoy.
Note

*Cajun spices are made up of a mixture of paprika, thyme, oregano, cumin, mustard, hot peppers, garlic, salt and pepper.
