Honey-Mustard and Apple Stewed Pork Shoulder

Ingredients
  • 1 onion, coarsely chopped
  • 2 McIntosh apples, peeled and diced
  • 1 duBreton Pork Shoulder
  • 80 mL (⅓ cup) of honey
  • 60 mL (¼ cup) of Dijon mustard
  • 60 mL (¼ cup) of whole-grain mustard
  • 60 mL (¼ cup) of water
  • Fresh ground salt and pepper
Preparation steps

Slow cooker

  1. Cover the bottom of the slow cooker with the onion and diced apples.
  2. Place the pork shoulder in the slow cooker (sear the pork first if desired*).
  3. In a bowl, mix the honey, mustards and water. Pour over the meat and season generously.
  4. Cover and cook on high for 5 to 6 hours or on low for 7 to 8 hours (may vary depending on slow cooker). The pork is done when the meat is fork-tender.
  5. Remove the meat from the slow cooker and keep warm.
  6. Purée the drippings with an immersion blender to make a smooth gravy.
  7. Serve the pork with the gravy.

 

* Searing the meat shortens the cooking time and adds flavour. Using hot water also helps to raise the temperature faster.

 

Conventional oven

  1. Preheat oven to 160°C (325°F).
  2. In an ovenproof pan, sear the pork shoulder in a little oil or butter.
  3. In a bowl, mix the honey, mustards and water. Pour over the meat and season generously.
  4. Cover and bake for 3½ – 4 hours or until the meat is fork-tender.
  5. Remove the meat from the pan and keep warm.
  6. Purée the drippings with an immersion blender to make a smooth gravy.
  7. Serve the pork with the gravy.
