Rib Poutine with Apple BBQ Sauce

Ingredients
  • 1 package of duBreton back ribs
  • 15 ml (1 tbsp.) butter
  • 2 cloves of garlic, chopped
  • 1 onion, chopped
  • 1 apple, peeled and diced
  • 1 litre (4 cups) concentrated beef stock
  • 60 ml (1/4 cup) barbecue sauce
  • 45 ml (3 tbsp.) cornstarch
  • 2,5 litres (10 cups) yellow potatoes cute into sticks
  • 45 ml (3 tbsp.) canola or olive oil
  • Ground salt and pepper
  • 500 ml (2 cups) cheese curds
Preparation steps
  1. Separate ribs into sections of 2 bones each.
  2. Place in a cooking pot and cover with salt water. Bring to a boil and cook for 45 minutes.
  3. Using a saucepan, melt butter over medium heat and sauté garlic, onion and apple for 5 minutes.
  4. Add 875 ml (3 ½ cups) of stock and the barbecue sauce. Bring to a boil and simmer for 5 minutes.
  5. Using a hand mixer, blend the sauce and add the cornstarch that has been diluted in the remaining stock. Simmer until thickened.
  6. Pre-heat oven to 450oF (230oC).
  7. Spread potatoes on a cooking sheet covered with parchment paper and coat with oil and season. Bake for 30 minutes in oven until the potatoes are tender and golden. Stir once or twice while baking.
  8. Using a separate baking sheet covered with parchment paper, spread cooked, drained portions of ribs. Baste ribs with sauce and bake in oven for 5 to 10 minutes.
  9. Divide potatoes into 4 bowls, add cheese, coat with sauce and top with ribs, with or without bones.
