Broccoli and Sausage Calzone

Ingredients
  • 10 ml (2 tsps.) olive oil
  • 4 green onions, chopped
  • 2 cloves of garlic, chopped
  • 375 ml (1 ½ cups) small broccoli bouquets
  • 250 ml (1 cup) ricotta
  • 1 pinch ground nutmeg
  • 5 ml (1 tsp.) dried oregano
  • Ground salt and pepper
  • 125 ml (1/2 cups) dried tomatoes in oil, chopped
  • 1 65g package of duBreton Appalachian Treasure Dry Sausage, sliced
  • 600 g (1 1/3 lbs) homemade or store bought pizza dough
Preparation steps
  1. Using a frying pan, heat oil over medium heat and sauté green onions, garlic and broccoli for 5 minutes. Remove from heat and allow to cool.
  2. Using a bowl, mix ricotta with nutmeg, oregano and season generously.
  3. Add dried tomatoes, sliced dry sausage and cooled vegetables.
  4. Pre-heat oven to 450oF (230oC). Cover 2 baking sheets with parchment paper.
  5. Separate dough into 4. Using a rolling pin, flatten dough to obtain 4 circles of 16 cm (6 inches) of diameter.
  6. Divide topping on individual circles on one half only.
  7. Brush edge of dough with water. Fold un-garnished half over garnished half and pinch edges together in order to seal filling inside.
  8. Place on baking sheets and bake in oven for 15 minutes or until dough is golden.
