Curry Pork en Papillote with Coconut Milk

Ingredients
  • 2 duBreton Curry Pork Boneless Loin Filets
  • 4 carrots, julienned
  • 1 L (4 c.) of snow peas
  • 1 red pepper, cut into strips
  • 2 green onions, thinly sliced
  • Salt and fresh ground pepper
  • 60 mL (¼ c.) of fresh chopped basil
  • 125 ml (½ c.) of coconut milk

 

Preparation steps
  1. Slice each loin filet into 3 pieces.
  2. Preheat oven to 500°F (260°C).
  3. Set out 6 pieces of aluminum foil on the counter.
  4. Divide the vegetables among each piece of foil. Season to taste.
  5. Place one piece of pork in each nest of vegetables, top with basil and drizzle with coconut milk.
  6. Cover each serving with a second piece of aluminum foil and then fold in the foil on all sides to make sealed packets.
  7. Bake for 20 minutes and serve.

 

Cooking on barbecue:

  1. Preheat barbecue to medium-high heat.
  2. Place the foil packets on the grill and cook for 10 to 12 minutes.
