Ingredients
- 1 slice duBreton Bacon
- 1 tsp. (5mL) grated orange zest
- 1 strip orange zest
- 3/4 oz. Campari (Optional: Bacon Fat Wash Campari, recipe follows)
- 3/4 oz. Gin
- 3/4 oz. Sweet Vermouth
Bacon Fat Wash Campri
Save rendered bacon fat in a freezer safe container. Add 1-1/2 cups (375mL) Campari for every 1/2 cup (125mL) bacon fat and freeze for at least 24 hours or up to 3 days. Strain through a fine mesh cheesecloth-lined strainer before using. Refrigerate Bacon Fat Wash Campri when not in use.
Orange crusted bacon strips can be made up to four hours ahead and stored in a resealable container at room temperature.
